About a week ago, I had this massive craving for Sushi.
Unfortunately, it is pretty expensive when you want to eat more than just 6 tiny rolls. I thought about making it myself again (once did a few years ago and I hated it!) and searched for an easy recipe. I had hoped to find some hints and tricks to make it easier and quicker. And guess what I found? This delicious recipe for "Sushi Salad"! It's really easy and so delicious, I will definitely make this again very soon!
Basic ingredients for 2 servings:
- 100 g rice (either Sushi rice or regular rice which is less expensive)
- 150 ml water
- 25 ml (about 2 and a half table spoons) rice vinegar
- 1 tea spoon sugar
- a hint of salt
- 100 g shrimp
- 100 g salmon (smoked or raw)
- 1 cucumber
- 3 nori leaves
- 1 table spoon sushi ginger
- 2 limes
- 1/2 tea spoon wasabi (or more or less depending on how hot you like it)
- 1 table spoon soy sauce
- 1 table spoon sweet chili sauce
100 ml are about 3.4 fluid oz - as for the rest, I used what I thought was ok to add and how much was in a box when I bought it *lol*
If you don't like salmon, you can substitute it with canned tuna or leave it (and the shrimps) out completely if you don't like sea food. You can also add everything that you love to have as sushi, e.g. tofu, tomato, bell pepper, avocado, spring onions... and so much more!
Preparation
Wash and boil the rice according to the instructions, most likely your rice needs to be boiled about 15 minutes. Pour the water and let the rice cool down while you prepare the "marinade" for the rice:
Mix the rice vinegar with the sugar, a dash of salt and add it to the rice. From time to time, stir the rice while it is cooling down and you have time to cut down the other ingredients.
So, cut the cucumber and any other ingredients you want to add (I LOVE the avocado!), add the smoked salmon and the shrimps and cut the nori leaves into small pieces. Use a scissor for the nori leaves! Add the ginger.
Mix the juice from the 2 limes (or use lemon juice!) with wasabi, soy sauce and sweet chili sauce. Mix it really well and then add to the ingredients. Then add the rice and mix carefully.
That's it already!
Keep it in the fridge until you serve it, especially when you use raw salmon!
This is also a great idea for any potluck idea - I bet it will be a special contribution to any party.
